It is recommended to get a whole coconut. Find an “old coconut”. The browned one that you see sold in ethnic grocery stores. You should use this type because the meat has hardened and thickened and the coconut water is dried up.
However, if you can’t find it, opt for the unsweetened dried coconut shreds or flakes. They should be fresh. Make sure not to use sweetened, roasted, reduced fat or desiccated coconut.
You should use a high-powered blender (such as Vitamix) to prepare coconut butter. However, if you don’t have one, you can also use a food processor. It may take a little longer.
Add 6 cups of the coconut flakes into your Vitamix/blender or food processor. This amount is perfect for creating a smooth consistency.
You should blend for 1-2 minutes until you get smooth, butter-like consistency. Your coconut butter is still liquid, so you should pour it into a jar and leave it to cool in order to solidify.
Those living in a hot climate place are recommended to place the coconut butter in the fridge so it will solidify. That is it!
